The search for the temperature/humidity/time/ingredients ratios, the hands on method for the main rise and the proofing.

And then there's the toppings.

And repeat.

Da Moreno's is on this impossibly narrow road, alongside a bunch of expat bars and restaurants.

But it stands out.

The base looks like a 48hour rise. Blackened and puffy around the edge. Oozing flavour under the tomato and toppings.

My test subject was Capricciosa. And I asked for extra chopped fresh chilli. Ting Ting! Local for super hot.

This humble pizza (ok, I understand the whole Italian menu is great) was just too good for words. Up to the standard of my best local. But low salt!!

When you crave something a bit more familiar, get a grab bike or a taxi or walk from Bangla Road like I did in 16mins.

BUT. GET. THERE. You won't regret it. Oh and did I say the service was friendly and relaxed?
